This well balanced, versatile Balsamic Vinegar of Modena PGI has delicate notes of sweet and sour on the palate with hints of wood and grape must. It’s the perfect match for a wide range of foods, from salads, vegetables, and aged cheeses to slow roasted meats and fish carpaccio’s.

Our Vignoli Balsamic Vinegar of Modena follows strict PGI guidelines. Once the cooked grape must and wine vinegar are combined, they then mature in top-quality barrels exclusively made of wood such as sessile oak, cherry or mulberry. Our Balsamic Vinegar of Modena contains no chemicals– no caramel colors, no Arabic gum, no artificial flavors, and no added sulfites.

Wine vinegar from selected cellars. Cooked grape must from grapes: Lambrusco, Sangiovese, Trebbiano, Albana, Ancellotta, Fortana, Montuni

Matures in oak and chestnut barrels for 12 years.

We bulk import our Balsamic Vinegar of Modena directly from Italy to Miami in large insulated containers where it is then moved directly into storage tanks and we keep the temperature below 70°F. Bottling only takes place once we receive a customer's order. Balsamic Vinegar of Modena is a Protected Geographical Indication product, which means that all stages of production must take place between the Italian regions of Modena and Reggio Emilia. Real Balsamic Vinegar of Modena PGI is thick and velvety with a deep warm brown color. Its fragrance is undeniable and its taste is best described as balanced, pleasantly sour, and slightly bittersweet. All of the stages of production when making this special vinegar are regulated and protected by the Balsamic Vinegar of Modena PGI Production Specifications.
