Vignoli's Handcrafted Pasta Here's how we do it. We begin by sourcing the finest Italian ingredients. High-quality durum wheat flour (semolina) is combined with fresh farm eggs to create an exceptional pasta that blends the proper ratio of glycemic index with protein content. Then, using our advanced culinary technologies, we get to work making our pasta by replicating that made-from-scratch magic our nonna's taught us. We take extra time to carefully double knead the dough until it's pliable yet still delicate. Next, the dough is pulled into thin sheets and adjusted for proper thickness using our special adjustable sheeting process. We never use mechanical presses, extruders, or dies in order to avoid any extra thermal stress on the pasta which could undermine its quality. Last but not least, we dry our pasta for twenty-four hours at the perfect temperature which helps to preserve both its flavor and quality. The final result is a handmade pasta that would make any Italian nonna proud. Deliciously toothsome and redolent with the flavors of Italy, our fresh pastas are made to be tossed with one of our homemade sauces or simply drizzled with a couple of tablespoons of our Extra Virgin Olive Oil.
